
Happy Sunday lovelies! It is Week 2 of the Menu Planning Challenge hosted by Mommy Run Fast and Fitness, Health and Happiness.
Last Sunday I shared with you my meals planned for the week. I also mentioned my method of meal planning. Here’s what meals actually happened last week:

Well they roll on over to this week, of course!
But what happened with all those fresh veggies you bought for them??
Well that’s the plus about buying local! Fresh fruits and veggies from the Farmers Market tends to last longer if stored properly.
I still have all the ingredients.
Since some recipes are rolling over, our shopping list for food this week is almost non-existent. That helps a lot since there are some household items that need to be bought, such as laundry detergent, fabric softener, and paper towels. Not to mention the furkids are up for their shopping trip too, like kitty litter and dog food. So it all works out perfectly for me.
So with that being said, here’s my menu list for this coming week!

I love how long those fresh veggies last! I also plan for about 4 meals, and the others turn into leftovers or nights out, or last minute changes in the plan. Mmm, I am intrigued by those coconut chicken tacos!

I'm kinda bummed we didn't get to the coconut chicken tacos last week but I'm planning on cooking them tonight! Both PJ and I are excited to try it…it just sounds so yummy!! I'll post on Instagram!

I plan pretty much the same way as you do! Make lots, eat leftovers! I love it. Although I do want to hear how the coconut chicken tacos are!

Agreed! I really should use it more!
We made those tacos last night & they were so easy! The only thing I would change is to season the chicken while cooking. I found that it was lacking that taste. It was slightly bland. I'd make it again though!
Maybe tofu?? You'll want something that will soak up the coconut milk to give it that taste.
