
Late to the party again…are you really surprised?
We made it to the end of the Menu Planning Challenge hosted by Mommy Run Fast and Fitness, Health and Happiness! If you haven’t heard already, they are going to continue the weekly party. Awesome!
Once again, this past week I didn’t use all the meals I had planned. We ended up eating out three times. Once at a sit down restaurant and the other two were on the go. Well, there are times you just have those weeks where you’re on the go-go-go that it’s easier to grab while you’re out. The good thing is, now that I’ve started meal planning we’ve reduced the grab-n-go foods!
Here’s what meals actually happened last week:

Sometimes you can find the best recipes on the back of a box. I love lasagna, but I don’t have a specific recipes that I make over and over again. I just use the recipe on the back of the lasagna box! *drool-worthy*

I used the homemade tomato sauce that I canned a couple weeks ago and ground chicken instead of the canned sauce and hamburger. Ummmmm….YUM! PJ even said it was the best lasagna EVAR! =) Oh yeah, and I was totally proud of my layering skills this time! I’m horrible at layering lasagna, but this time I totally hit the nail on the head! {I won’t tell you that PJ totally screwed it all up by shoving the leftovers into a container instead of just covering it and putting the pan in the fridge.}

We still have leftovers in the freezer and since I don’t want them to be forgotten about or get freezer burned, I’ve planned next week with that in mind. So I’ve only decided on two meals and then the rest will be picking through the freezer meals to get them eaten up!

Nice job on the lasagna! I love how much one big pan makes, it take time to throw one together, but all the leftovers are worth it.

Totally agree! I love lasagna and making it with that homemade tomato sauce made it even better this time around!
lasagna and anything pasta related is my blood line in life. this looks drool tastic!!!! I have become mainly vegetarian, but my italian meals are an exception. I love bolognese sauce and meat lasagna. totally craving some right now. If the store has supplies tomorrow, I totally want to make some in my 2 inch conventional oven? haha, yeah, we'll see how that would even work.
