
I’m late to the party again! It is Week 4 of the Menu Planning Challenge hosted by Mommy Run Fast and Fitness, Health and Happiness.
I’m actually proud of myself for sticking with it for the past 3 weeks. This past week we only used a few of the recipes. We had fair food one night and plenty of leftovers. So here’s what meals actually happened last week:

The chili I made had all fresh ingredients! I used the homemade tomato sauce I canned last weekend, plus a fresh diced tomato, black beans and light red kidney beans {both dry, NOT FROM A CAN}, and lean ground chicken breast. Just add some garlic salt and chili powder and voila! Totally drool worthy.

I drafted a few easy meals in for next week. I’ve been really tired and worn out lately, so I need those easy ones right now. Here’s the list for this week!

I’m excited to try that Healthy Parmesan Chicken that I found pinned on my Healthy Meals Board.

Easy meals are great when you're wiped out! I have homemade pizza down for tonight and am not really feeling like making the dough, but hope to find my energy by then.
