So the past two Wednesdays you’ve seen me tease you blog about my Farmers Market purchases. To bring the whole “Fall Into Good Habits” theme full circle, how about I show you what I’m using those fabulous goodies for??
What a concept! I know right! :p
Remember all those bell peppers I picked up two Saturdays ago? Well just look at these scrumdiddlyumptious cups of yumminess!

Shrimp & Quinoa Stuffed Peppers
I had more shrimp and quinoa blend than I had peppers. So I paired them with some scrambled eggs the next morning for breakfast!
And the eggs I bought three Saturdays ago? I used an egg yolk to make homemade mayonnaise!
Even thought we’ve made an effort to eat cleaner lately, that doesn’t mean we still don’t go out to dinner…we do! PJ treated me to drinks & dinner on Thursday. Love him! Who says you can’t eat out healthy?

Bite size cheddar biscuits, salad bar & a strawberry sangria,
and baked salmon topped with spinach & artichoke sauce
on a bed of spinach paired with roasted spaghetti squash
PJ never had spaghetti squash before so I let him try mine. When he did, he made an odd face. Then the conversation that followed went like this:
Me: So, how do you like it??
PJ, chewing slowly: …tastes like crayons…
Me, laughing: How do you know what crayons taste like??
PJ, sheepishly: …Cause I’ve eating a couple in my life!
I totally still love him, even if he has eaten crayons.
The meal planning is going surprisingly well! I’m totally proud of myself for making the effort and sticking with it the past couple weeks. I had my meals for this week picked out and the shopping list created by Friday night. I’ll leave you with my Farmers Market haul from Saturday. Stay tuned next Wednesday for the follow up on how I used all these goodies!

Eggs, 5 bulbs of garlic, 4 one lb bags of carrots,
2 bunches of kale, 4 gourds, sample block of habanero cheese,
huge block of sharp cheddar cheese, avocado, 2 pears,
8 tomatoes, bunch of bananas = $24

Your peppers look so good! I've never seen any that I really like but I love that yours have quinoa and shrimp. Will try!

you know I'm not a mayo girl, but I do like things that are homemade! also obsessing over the peppers, shrimp and quinoa. If only my stomach wasn't so grouchy when I ate seafood and meats!

You can change up the shrimp for something else! Those stuffed peppers were so yummy! Or even diced up the shrimp to smaller pieces and use less!
