We all know that yellow squash is a summer vegetable. So I’m sure for many it’s a summer staple. It makes an appearance several times in my co-op bag for the summer. More times than I’d like. I can’t really get a taste for it. It’s not that I don’t like it…it’s more that I don’t care much for it.
Since we get so much of it during the summer, I’m always trying to figure out ways to use it all up. {Juicing is one way, of course!} So I had been craving sloppy joes for a few days since I saw a “healthier” version on one of the blogs I follow. Then I figured why not make homemade sloppy joes and incorporate of a few of the veggies from the fridge that needed to be used! Smart, I know! Well, here’s what I threw together…
Ingredients:
lean ground beef {I use 96/4%}
pureed tomatoes
diced onions
minced squash
carrots {I used the carrot pulp from the juicer!}
ketchup
apple cider vinegar
Brown the onions and ground beef together. Once browned, add all other ingredients and let simmer.
YUM!!! I’m totally proud and satisfied with the end results! Poor PJ…I literally stalked him from the minute he got home from work to the minute he took the first bite. I was curious to get his honest opinion. And he loved it! SCORE!
