Sunday I woke up and decided that it was the day I was going to try and whip up something yummy in the kitchen. Since it was my rest day, I had plenty of time to try out this idea I had for a healthier version of pancakes. I used the fresh strawberries I had in the fridge, but also added a little more sweetness with some Ghiradelli 60% cacao chips! So without further adieu, here’s what I came up with:
Strawberry Chocolate Chips Pancakes!
INGREDIENTS:
- 1 C whole wheat flour
- 1 C regular flour
- 1/4 C ground flax seed meal
- 1/2 tsp baking soda
- 1 1/2 tsp Truvia
- 1 large egg
- 1 1/2 C skim milk
- 1/2 C Chobani greek yogurt {I used vanilla but want to use strawberry banana next time}
- 1/2 banana, mashed
- 1 C diced strawberries
- Sliced strawberries, for garnish
- Ghiradelli 60% cacao chips

DIRECTIONS:
1. Preheat griddle to 350 degrees.
2. Mix the dry ingredients in a large mixing bowl: flours, flax seed meal, baking soda, and Truvia.
3. Mixed wet ingredients together in a smaller bowl: mashed banana, milk, greek yogurt, and egg.
4. Add the wet ingredients to the dry ingredients and mix.
5. Then add the diced strawberries and mix.
6. Pour batter onto the griddle and then push a few chocolate chips into the pancake, then take a small spoon of batter and cover the chips.

7. Cook until done and serve warm with sliced strawberries and additional chocolate chips, if desired!
