I was talking with some coworkers last week about meatloaf when a light bulb popped on over my head. I had an idea and I went home that day determined to try it out! Here’s the end product!

INGREDIENTS:
- 1 lb lean ground beef/turkey/ground chicken {I use 93/7 ground beef, as lean as possible}
- chopped onion
- minced garlic
- 1 beaten egg {I used Egg beaters}
- 1 tbsp Worcestershire sauce
- salt
- pepper
- 1/3 C catsup {organic if possible}
- 1/2 C Quaker Instant Rolled Oats
- Mozzarella cheese block, sliced
- tomato paste {organic if possible}
Sorry for the lack of measurements on some things, but if you’ve read my recipe posts before, you’ll know that most of the time I use ingredients to my taste rather than measuring them out.
DIRECTIONS:
1. Preheat oven to 350 degrees.
2. Mix all ingredients well in a bowl, except the mozzarella cheese and tomato paste.
3. Place a thin layer of meat mixture in the bottom of the loaf pan.
4. Layer slices of cheese over the meat mixture.

5. Place another layer of meat mixture, then repeat with another layer of mozzarella cheese slices. {It’s just like layering lasagna!}
6. Top with a layer of the meat mixture, then cook for about 40-45 minutes.

7. Remove from oven and spread a layer of tomato paste across the top, then bake an additional 10 minutes.
Serve warm! Enjoy!

We paired this yummy dish with sauteed asparagus that came from our neighbor’s garden. Of course you can pair it when any vegetable you like.PJ went back for seconds so that definitely means it was a hit! So yeah, this idea is definitely a keeper!
